Week 3 started with even more gusto than the 1st 2, I had spent spent most of those researching different recipes I wanted to try, and I had been paid, so had bought all of the kitchen essentials I needed to started baking and experimenting in the kitchen. I have 5/6 I will be highlighting today!
First I obviously tried the Fathead Pizza, which was definitely a success, I however used coconut flour instead of Almond and forgot to season the base, which did mean that it had a slight hint of coconut to it, not complaining though I love coconut, just will use almond flour and season the base next time to get a more authentic pizza base. I was so afraid when I started this that I would be able to enjoy my favorite anymore, but boy was I wrong!
My second was the ICE-CREAM, I had never made ice-cream before ever, and I must say for my 1st attempt i think I did a pretty dam good job. Obvously it wasn’t perfect by any means, but fact is it tasted like vanilla icecream. I took ideas form a few different recipes I found online, but the main bulk of it was from ruled.me (loving this blog, tons of easy recipes! – Ruled.me ice-cream ). I didn’t do the cookies part of this recipe though as I already had some Keto brownies that I had baked. I chose to add some MCT oil to the recipe for higher fat count and a smoother finish, however the longer it’s frozen the more solid it got, so I have to leave it out for ages before I can have any, which isn’t really that huge of a problem to be honest. I would make slight changes perhaps to make this more to my taste such as putting in a little less erythritol as I found it rather sweet, however having this with some peanut butter balances out the sweetness for me so still definitely do-able! (Just a note that I am writing this in the middle of week for and I have now actually found an ice-cream you can buy that is pretty keto friendly called Perfect World Ice-cream , I will obviously talk more on this in my next blog!)
My third experiment was some low carb tortillas, these were definitely a success too, however I wasn’t massive on the taste, I also chose a complicated’ish recipe which included a lot of psyllium husk, I love this ingredient as a binding agent, however it kind of took-over the taste slightly, still good though especially if you like very bready tasting stuff. There is a lot simpler flatbread type recipes that I have seen that I will be definitely using whenever I’m in need of tortillas.
The 4th experiment was 4 ingredient pancakes I found on Keto Connect – Keto Connect Macro Pancakes (this couple is my absolute favorite when it comes to keto, they also have a YouTube channel – Keto Connect YouTube ). These partnered with my sugar free butterscotch syrup were ABSOLUTELY delicious! Without the syrup they obviously were not sweet so I actually used them in a savory wrap which was also a complete success! I would suggest adding a sweetener in future if I wanted to have the pancakes without any of my syrup. But these are definitely going to be a regular in my kitchen, even made some for my roommate who absolutely loved them also (she is not keto), so a winner all round!
The 5th and 6th, I’ll group these because they are both baked goods, were these Keto Fudgy Brownies from the My Sweet Keto blog post, which I have to say where one of THE BEST brownies I have ever made, keto or non keto alike, they were moist, chocolatey and luxuriously decadent, every time I ate one I had to remind myself they were keto, even my non-keto friends absolutely loved them! The 2nd were the chocolate peanut butter muffins which for the life of me I cannot find where I got them from! These were absolutely delicious, I chose to swirl the peanut butter on to the top of the chocolate batter just before I put them into the oven and this was my best idea yet, they taste of a strong chocolate then perfectly cut by the saltiness of the peanut butter, absolute perfection! If I figure out where I got them from I will post them in a future blog post.
Now I know some ketoers out there are anti sweeteners, however I have remained in ketosis the whole time (test myself every 2 days), and I feel great, can see my stomach shrinking and absolutely loving my kitchen experiments, so each to their own is definitely my keto philosophy!
